Time to open…300 chairs, 12 taps, 15 lounge suites, 6 leather booths, 6 beer vats, 1 pot belly and 1 library. By midday they will all be doing their respective tasks. They provide the beer, food and comfort.
A marina fronting courtyard, 200 CD's, and an old boat shed 'cum croc-farm provide the atmosphere and the backdrop.
My name is Nicko and I'm a creature (thats me in the photo).
A creature of the day right now. We won't see the creatures
of the night for another nine hours. They are resting now, recuperating.
The energy spent serving 700 guests from last night's celebrations.
To each person we are different…a brewery; a quick bite to eat; after dinner coffees; a library to study; a Sunday session; an art gallery…but we are most definitely a brewery.
Surfers, students, professionals, short people, academics. These are the creatures of the brewery…they are also our customers. They may all walk, look, live and behave differently, may not agree on all issues, but are collectively drawn together to celebrate our one common love. Our enjoyment of a unique, quality, naturally brewed ale…"the Pale" …the beer that bonds, breaks down barriers and removes old inhibitions.
Whether it's brunch, lunch, dinner or beers, we have a creature to satisfy each customer, every day of the week.
For the next 15 hours we will entertain, educate, quench your thirst, fill your plate and look out for your children. It's what we do. If we do it well enough, hopefully you will return.
9-12 Brunch
Families and friends gather to wash away yesterday and begin
today. Don't forget to pack your dog! We have dog bowl's underneath
some old gnarly olive trees providing shade and a leash lash
option.
Coffee, brekkie, bubbles and beer. Some will stay all day, others off to the nearby beach.
Midday - 6pm
"Table for 20 sir? Problem? Not likely!" They are all thinking beer before they've hit their seats. Four choices in two sizes…not too difficult…well you wouldn't think so!
Orders placed on the infrared, space-age waiter pad and I begin to explain the menu.
Our chef has organised an unlikely bunch into a well-oiled
cooking machine. They in turn organise a rustic, homely, yet
fresh and funky menu. It's fast and prepared in front of you
in their open kitchen.
It would want to be fast, 1000 people will demand it fast today.
Wood-fired pizzas, tasty tapas or crisp salads…only a few of the offerings to appease every guest. Well almost.
Before I've finished explaining our menu and service, the beers have arrived. Either they were fast or I'm getting slower…no the drinks are fast!
The music is starting to crank up. Funky world music beats a rhythm the staff matches. It helps to keep us fast.
The next six hours are a hectic anthill of humanity. Our customers are getting lubricated, my muscles are loosening and we've hit top speed.
The chaos is carefully orchestrated by
our managers, but don't look for their name
badge and tie - cheesecloth shorts, t-shirts and faded aprons
are the norm here. Most of our customers are better dressed
than us. Shoes, top and a smile are all we ask. True, they say
we are as conservative as Tiny Tim on acid!
6pm - midnight
More people are arriving, nobody leaving; everyone is stayin' to enjoy the sunset over the yachts in the marina.
The night creatures arrive within them. Dinner is served until 11pm, pizzas until midnight.
Beer at 9am and steak at 11pm we are certainly different.
Who said we couldn't organise a piss up in a brewery? We do, each and every day.
Everyone is enjoying themselves…the staff seem to get the biggest kick out of it and it's rubbing off on the customers.
Every day of the year is different. And I haven't even started on our famous parties. Bohemian circuses, tribal dance parties and a mid-summer's night romp …but that's a different story.
Tonight will continue much like today…add 100 candles, 10,000 stars and the cooling sea breeze. Much like today - only darker outside.
